The lowly Irish potato is a very nutritious vegetable that is more than just a delicious food supplement. In fact, potato health benefits are so great, you can describe them as “underground health superstars.”

Potatoes are also relatively well (moderate) source of iron as well as vitamin C helps the body absorb iron, you can get the most benefit from it. It is also an excellent source of several vitamins, especially B1, B3 and the B6, as well as some vital minerals.
In addition to the potassium, which helps the heart, muscle, and even our digestion, potatoes are a source of phosphorus and magnesium; and contain folic acid, pantothenic acid and riboflavin.
It does not end there: potatoes are also a source of antioxidants, which are recognized as playing an increasingly important role in the prevention of diseases which are associated with aging, including cancer, and dietary fiber, which is beneficial to human health for all ages. Many people think they are mainly consuming potato starch but this is a misconception as potatoes have a lot more than that.
